Long before America had a name, villagers in Central Europe wrapped sweet dough around oak rods and turned them over open coals. The trdelník — chimney cake — was born of festival smoke and patient hands.
Steve learned the craft the old way — rolling dough over open coals at Czech market stalls back in 2016.
In 2018, a young European couple loaded a single rod, a sack of flour, and a stubborn faith in tradition into a borrowed truck. They set up beside a jousting field in Texas. By dusk, the line wrapped twice around the booth.
